My sibling is a HUGE fan of the Panzer Dragoon series on the Sega Saturn and I've heard them talk about how they had only two people to translate the third game, Panzer Dragoon Saga. What makes it slightly harder than the average game is that as a part of the world-building, a majority or all of the game is in a conlang. So its not just "from Japanese to English" its "from Panzerese to Japanese to English back to Panzerese." They were apparently working around the clock to make it happen as the game has nearly 2 hours of cutscenes - unheard of in 1998.
